Michel Bras

Star chef Michel Bras was so excited about the sharpness of Japanese KAI knives that he collaborated with KAI for his own knife series in order to meet his demanding needs.
The idea was to create a knife without compromise. His father, having been a superb blacksmith, and KAI's equally long experience with traditional knife production in Japan, contributed to the excellent result.
A three-coat blade structure allows for the ultimate cutting performance and the best handling. An additional titanium coating improves the blade's glide. The chestnut shaped handle made of black laminated wood is water- and steam-resistant. Its unusual shape removes much load from the hand for optimal cutting comfort. The maneuverability of the blade, the shape of the handle and the treatment of the cutting surface vary with each of the seven knives. The whole series is hand-crafted.
Each knife carries its own manufacturing number, since each one is unique. This facilitates servicing, because it allows for the precise identification of each knife.
